Under the
AC international tariff (rule 80(D)(2)(b), to be precise), you're entitled to a refund of the fare difference for the downgraded segment. That can be complicated to calculate, and the amount may be underwhelming, but hopefully they'll throw some sort of goodwill eCoupon/discount code on top of it.
No idea who you've been in contact with. The best way to get your compensation is likely through the AC
customer service web form, which has a specific function for CoS downgrades. Follow the link, then go to
Flight Delay or Cancellation Claim. Select
Class of Service Change from the dropdown. Select from business or signature as applicable, then fill out the form.

Regardless of what the OP's BP says, the manifest, which AC has on file, should reflect the change.
