Try it in pasta first -- in Japan it's common -- trust me Hokkaido Uni when fresh is amazing! In the US there is East and West coast Uni -- I always choose east coast as the waters are colder -- makes for better Uni. I can totally get it if you get a glob of Uni on junk rice and junk seaweed wrap -- it sucks... But fresh Uni pasta is one of the joys of life -- and then work your way up the ladder....
