Your bags will be tagged to LAS however every passenger entering the US must claim their luggage and proceed through customs at their first point of entry.
So you will arrive at LAS, go through immigration, then collect your bags and proceed through customs, drop your bags off, re-clear security, then proceed to you next departure gate.
That sounds like a lot however with 1:09 you should be fine. If your flight is close to leaving LHR on time then you'll most likely arrive 10-30 mins early into PHX, AA pads the schedules a lot.
AA typically uses door 2L to board 777's, which is in the middle of the business class cabin. So in economy it's rather simple, the closer to the front of the economy cabin you are, the quicker you will be able to deplane.
