EI - that's I, not L - is the IATA code for Aer Lingus.

Correct; but compensation also depends on how late you arrive at your destination, and that hasn't been settled yet. It's at least possible that you could be rebooked in a manner that would not lead to a delay sufficient for the payment of late-arrival compensation.

Aer Lingus is not responsible for costs at your destination...that would, instead, be a matter for your travel insurance. They have, however, a duty of care and if ORD is not the origin of the journey (i.e. not your home), then they would be responsible for putting you up for the extra night's accommodation while you await your delayed flight, if travel on the next day is the best they can do. However, if you were to proactively ask for travel on a different date, then there would be no requirement on the airline to pay for accommodation at ORD.
However, this is all a bit premature because you haven't been rebooked yet.

If you want to travel on a different date, then that is certainly an option that is open to you and you can request to be carried on a different date of your own choosing.

However, if you still want to travel on the date originally planned, you should ask for alternates. At the very least, EI should be able to investigate putting you on BA services on the date originally planned to depart.

That may prove impossible. The fact that you have 6 separate itineraries means that each person will have to ring up individually; I doubt the airline will allow any one of you to "speak for all" and coordinate that all 6 separate bookings are rebooked in the same way on a single call.
