I don't understand why you hesitate to use the ferries? They are an integral part of the main roads in the west and north of Norway. In the summer there might be long queues, but not in spring.
I also have some suggestions to keep the distances down.

If possible, you should drive further this day. The roads to Otta is faster to drive than the roads on the west coast. Oslo - Otta via E6 is less than 3 hours. At least you should go to Valdres/Beitostølen, if not heavy jet-lagged.

I really understand why you want to drive by Stryn, it is a beautiful part of the country. This will be at least 5 hours driving, which I think is too much for the area. You will want more time sightseeing and it is tiresome to drive on small roads along the fjords. I would drive to maybe Videseter on day two.

I guess the drive to Turtagrø is to avoid the ferry between Mannheller and Fodnes on Rv5? That is almost 2 hour detour. While beautiful, there is something of getting too much fjords. The ferry will be a nice break, maybe for some snacks and stretching of legs.

Even with long hikes out of the question, I would bring some hiking boots. Some of the party might go for a afternoon or morning hike of half an hour.

The road conditons will be ok. Just inform the rental company that you will need winter tires.
And, if it is terrible weather, you could do the E16 from Valdres to Lærdal and spend some more time in the Sognefjord instead of Stryn.
Just know that Easter 2023 is the first week of April. So March 31st, April 1st, April 9th and April 10th will be big travel days with slow traffic out of and in to the Oslo and Bergen. Also, accomondation for families (rental cabins) will be fully booked.
