Day tour up to the Cu Chi Tunnels, but only if you go by speedboat. The tunnels themselves are a fun visit but the boat trip up and back was especially fun.

Self-tour of Independence Palace, which is a few blocks from the Hyatt. You kind of have to see that place to believe it.

Walk around Ho Chi Minh Square, which is actually a very long and vibrant plaza with a beautiful water fountain and typically thousands of people socializing (rather than looking at their phones).
