I also did my original GE interview in LAS, since at the time it had better availability than my home airport however this was 7 years ago; although from the CBP website it appears to be in the same place in Terminal 3: https://www.cbp.gov/travel/trusted-t...centers/nevada

It's true that there is an Enrollment on Arrival program, where you can have your interview at the same time that you are returning to the US from an international origin: Global Entry Enrollment on Arrival

however that is a separate thing; I am pretty sure that at any of the locations where you can schedule an interview, those locations will all be landside, i.e. before security. So it should be fine for your plan.
