Since you have the Turkish visa I do not see that you have a problem. In Cairo they will see you have the right to enter Turkey, even if you choose not to. Is it not possible to get the Air Albania boarding pass online? The Albania Airlines web site mentions online check in. Doing that should get you a boarding pass on your phone or laptop. That is enough. You can most likely do that before leaving home in Cairo. I think it is likely there will be a desk where you can get the boarding pass anyway. I have done that on other airlines at IST without going through immigration. The worst case is you have to use your visa and apply for another online for the return journey.
