Hello and welcome to the forum. You can do this in Istanbul. You may even be able to get the Air Albania boarding pass online. However, the problem will be at check in in Egypt. They will see you flying to Istanbul only and expect you to have a visa to enter Turkey. You would need to check with Egyptair to see if they would allow you to board in Cairo.
