Priority baggage handling just means your tag is marked PRIORITY when it's printed at the airport. Doesn't matter if you check in online or not.

Honestly though, it means little in practice. It absolutely does not guarantee your bag will be delivered before non-priority bags, or reduce the risk of mishandling.
