I don't mind arriving early, but just need to be able to plan for a long line up in terms of my son's toilet breaks and whether to get food in advance etc.
Anecdotally, last Friday around noon, it took about half an hour to get through both security and CBP for non status passengers.

Looks like around 1000-1400 is roughly the same level of traffic in T3 US departures: Airport peak times | Pearson Airport (torontopearson.com)
