Just seeing this, so you may have already booked. You'd probably like Excellence Riviera Cancun. I didn't love the food, but it was good enough for an all-inclusive. Tons of pool options including a long lazy river around the spa area. Decent amount of evening entertainment, although they do shut down the bars and such at midnight. Liquor brands were pretty good, but did feel the nighttime drinks could have been better (was tough to get a decent "evening cocktail"; they generally lacked the mixers for that and had more of the syrups and such you'd expect for pina coladas and such by the pool, but not when looking for something "classy" at night). 20 minute beach walk to Puerto Morelos if you want to escape the resort for a bit as well.
