if you have a >60min connection and you check a bag, SDC will still be available in the app or you can use the kiosk or talk to an agent. I've done this many times myself when I check bags.

jsloan said, the inventory has to be available for any remaining eligible segments. So if you want to confirm MBJ-IAH-PDX, your fare class has to be available for MBJ-IAH-PDX. If you have flown MBJ-IAH, then only IAH-PDX has to be available once you board the MBJ-IAH and the flight is departed since the leg will "fall off" your itinerary.
Any eligible segments cannot include any non-UA flights.
Again, you can always chat with AoD and see if they are willing to do it.
