Be warned that flights are packed, as Schiphol (and other airports) have required that flights are cancelled to limit the number of pax passing through the airport.

It's possible that there simply won't be a free seat - even in business class - on any flight between AMS and CDG on the day of departure. Perhaps this is the reason your TA "surprisingly" can't change the flight?
