Haven't had to do it often but never had a problem adding an extra night by just letting the front desk know.
That just seems like an isolated issue at one hotel and especially with one poorly trained front desk group that had no idea what they were doing.
I also have had no problems the few times I have extended a stay. I had one property that I extended 3 times, the last time they didn’t have the room type at the time but they somehow managed to find availability so I didn’t have to switch rooms. I think OP just had unusually incompetent staff.
