Normally I book the semi-flexible rate which you may cancel up to 3 days before arrival(now some properties have increased this to 5 days ) and, at Check Out, I ask what exchange rate USD-MXN they will use.
In my last trip(around mid June) one hotel mentioned 20.90, another one 21.10 and the 3rd one 21.80, which I replied I would not accept.
