and LATAM AIRLINES is from Miami to Lima

we have ESTA for USA entry and fully vaccinated

Not only do you need to collect your bags and go through customs, because LH is unlikely to tag your bag all the way to Peru, you’ll likely need to check in and drop your bags at the LATAM check in desk before the cutoff time (75 minutes before flight departure).
I don’t think you’ll make it. Immigration can easily take an hour, and that leaves you no time to pick up your bag, make it through customs, and over the the LP check in desks.
