Im EXP and stand a decent shot of an upgrade on a domestic flight - have loved the lie flat options on the SFO JFK route on the AA Sharklets

since it doesn’t seem like I can fly AA due to 2x cost, does it make more sense to fly Alaska (where an UG is a possibility) or JetBlue ?

I’d choose AS. I like the FC product. Food is good and their service has never disappointed. I also have been very comfortable in AS PC. Plus I’m an AC member so I get a lounge on both ends.
However, as stated above you’ll get more LP’s on B6. I credit exclusively to BAEC on Transcons, plus I buy FC, so I probably should recuse myself from this thread.
