Personally i would have no problem with option 1 knowing there will be plenty of rebooking options ( and the potential of eu261 compensation) should things go wrong but the very early start (in edi 5/5:15??) rather than the connection risk may make me look at the other options.
had a look at the availability it looks like both flights on that day are filling up fast. I may be best to stay overnight in London I think so gives me time for any lateness and time generally I think for any issues
