I feel like you've answered your own question. But if it were me, I'd take the longer layover, especially transiting YYZ now. For two reasons: making your next flight, and enjoying some real food before the longer haul. The 789s are nice but at the end of the day it doesn't outweigh the other issues in my mind, over a 7M8.
Thanks. I should've added that this trip would be in the fall (hopefully fewer issues/delays at YYZ by then), and this would be my first time trying the SS. While I might have another trip planned through YYZ later this year, I don't expect to be a regular, so would be keen on experiencing it as best as I can and comparing them to UA's Polaris Lounges.
Based on the reviews so far, it appears that I'd enjoy the YVR SS a fair bit more than YYZ (tarmac views, seems less crowded and more intimate), but unfortunately the only TATL option out of there in the winter schedule is to LHR.
