I have no experience booking at this hotel, but from what I can see it seems the connecting rooms is basically an option they offer to people who need two rooms and are willing to pay cash. You get a discount for paying cash for two connecting rooms. So I am quite sure you could book two separate rooms with points and request connecting rooms, with a very high probability of the hotel granting that request. If you want to exercise every option, I would contact Hyatt customer support and ask if there's a points upgrade option to this room.
