Obviously the determining factor is whether your can find availability. Also if you are planning on using the free stopover, the next question is whether you would rather visit Tokyo or Hong Kong (personally I like Tokyo a lot more)

And there are more gateways than just SFO and LAX. I had a very good business class fare JFK-TYO-TPE that was unfortunately cancelled due to covid (about $1800 rt booked through amex IAP, unfortunately scheduled for May 2020).
Stopovers are moot given HK quarantine and Japan entry currently limited to escorted “group” tours. I would not count on any stopovers planning for 2022 for HK, maybe for Japan depending on their group tour results (one of the first groups tested positive and they have elections next month). Also JL availability has been non-existent the last few weeks while searching 330 days out.
