That advise from Expedia is.... strange. If you wait with rebooking the return for that one person until the outbound is flown, will also be repriced... Did they explain what their $1.100 option really is? I find it quite hard to believe that this is just the price tag for a PNR split and rebook the return for one passenger. Unless the return flight date is on a very busy day or the original ticket quite inflexible.

I was able to find a new one-way return flight for $760. I'm considering grabbing that and just being a no-show on my original return.
As said before, you can also book a r/t and miss the return as well.
OR... third option:
Just book the third passenger US-EU-US on a separate ticket with the same arrival in EU but earlier departure back to us and "miss" the outbound on the Expedia flights as well? Might be cheaper. Maybe you can "cancel" the trip for the one pax at Expedia and even get some money back?
