Call Dohop on US: +1 646 751 8693 to see what they can do as regards rebooking, though I suspect for now they will just direct you to easyjet. Easyjet has an obligation to rebook you due to the cancellation, quite apart from your "connection insurance"; your Dohop "connection insurance" is not applicable in the current case (Easyjet are at fault; they have broken the connection before you even departed; this is beyond the scope of your Dohop "insurance").
Have you logged in to the Easyjet website, or app, and checked what rebooking options (if any) are offered?
Independently of all that, you should also
claim compensation for the cancelled flight on the Easyjet website. I'm not sure why you think 7 days is of relevance; compensation must be paid for cancellations made within 14 days of travel.
