Someone help me understand the travel delay part of insurance that kicks in if you test positive/are sick with covid and can't board your return flight home.

Let's say I get a policy that covers 2 people and only one of us tests positive before flying home and we both have to stay 10 days. I am looking at a few policies where the coverage under travel delay is $200 per day, maximum $1000 per person. Does this mean I would have a total of $2000 to cover meals and hotel nights for both of us if I insured 2 people? If so, I would have to find a cheap hotel for 10 days as we would have $200 per day between the 2 of us to pay for both meals and lodging. We will be in Amsterdam August if this should happen and we need to find a place to stay on for 10 days.

I've looked at many many policies and cannot find one that has more than $1000 per person trip delay coverage.
