Same here, anti-buffet e anti-all inclusive but was really surprised with Fairmont Mayakoba. Since AI is only an option, the restaurants maintain the quality of a la carte. Most people do not go for the AI, so it was amazing bartenders + decent restaurants. Definitely going back sometime soon.
