I've found the better caviar has kernels (egg) will roll off a knife and /or play chicken with a fork. I just smear them with the sour cream and scoop them with a blini. One crunch should do it and then discard the remaining blini. For the really cheap stuff I just wait until the eggs hatch and then find all sorts of sea creatures
