Probably cutting it close for me personally with checked bags. Assuming your flight is on time I’d factor in 40 minutes to get off and get your checked bag from your Dublin flight, then about a 15 minute walk to the Southwest counter, bags and security should be no more than 30 minutes max. SFO isn’t as busy in the afternoon or early evening timeframe which might help out.
