You can ask to be rebooked to an alternative with overnight implications or get rebooked onto the next day.

No, but it could be that you get to your destination faster so I would not rule it out.

3. If my checked suitcase makes the connection, but I do not, what steps do I take to make sure my suitcase is not sitting for 24 hours on a baggage carousel at EWR?
They won't let your suitcase depart without you. The opposite however is possible and your suitcase will eventually make it to you.

4. If I depart on the following day, will I need to find and take a new Covid test since my previous test will have been more than one day prior to my departure?
No there is a special rule about cancellations, just bring your original itinerary and COVID test (or proof of recovery).
