I like your choice especially for the price savings on a short flight like JFK-CDG. Flagship First Dining at JFK is very good and if you have enough time there, you don't have to worry about eating on board and can just go to sleep... assuming AA cabin crew don't yap all night long.
I tried AA F on MIA-LHR and did not find the Flagship First Dining to be very good. Maybe JFK will be better than MIA, but to me AA F is a significant step below AF P. That said, it is perfectly fine for a short flight and I too would not have spent an extra $5K for AF. I think I only spent $2200 RT on a BA F sale fare.
