I thought about that the moment I hung up. Can I just use my AS credit on the new AS flight that I book directly on their website ? If so that doesn't tie up any credit with AS I assume?
Just strange to me that if I can do it this way (cancel-credit-rebook-use credit), then why couldn't they just switch me over anyway, as I'd be going through alaskaair.com and not orbitz or expedia or some shop like that.

The disadvantage is that your money will be tied up with AS, and you'll need to use the credit within one year. This isn't a problem for those of us who fly AS frequently, but may not be desireable for you if you rarely fly AS.
