​​​​​​There is typically an option between fish and beef in the western J menu, though I can't say I recall if there is any greater likelihood to that being or not being salmon. Though my feeling might be that it is more white fish types than salmon. But Murphy's law could kick in.

My ANA flying is less than my JAL flying, but I have never had sushi on ANA. For the western J menu there is again typically steak or a fish option. The Japanese mains tends to have a beef component for both ANA and JAL. So with a beef restriction they can end up with a pretty narrow selection. The May Japanese menu on JAL is not a winner for you, beef in the starters, beef and salmon for the main; but the western menu has no salmon. And no sushi in sight. June and July menus are not online yet.
