Alright here is a weird data point. Booked three night stay Excalibur May 3-6 and then one night May 8th. Got the $30 F&B each night. Checked out (friend in room not me) and was charged $96, that was lower than it should be. Then there was a pending for $87, my guess $37 and $50 deposit for May 8th. Checked out of that and they said there was a $3 refund. Sure enough the former $97 was adjusted to $94 and the $87 pending disappeared. Both sets of nights credited to my Hyatt almost immediately.
