Hmm, interesting. I thought the cutoff was 12hr average RT. Maybe its down to 11hrs now?

You miss a more expansive bread basket (ie. garlic bread). You miss the pre-COVID dessert cart too. Yes, the "enhanced" service now has ice cream in a bowl, but the topping is frozen with the ice cream giving the whole thing a strange texture and you can't choose your toppings. They the tart option, pre-covid, there were a few more options. Breakfast had the cinnamon roll. So basically your list, with what I just mentioned touches every single course. So to me, that's a pretty substantial difference.
Plus if you go further back, there's the table cloth, better PDB service, salad cart, etc.

Why not do both? They happen at different times during the flight. It's more work for the FA, but the material costs are the same.

You can replace "Polaris" with pretty much any aspect about UA these days and get the same meaning. And I guess we've forgotten about SMI/J
