Navigating Schengen

Hi guys,
I need to get to Latvia in a few weeks, I'm based in Qatar. Vfs global in Qatar is practically useless for information. I was told today that Latvia is only accepting one visa appointment per week. This does not leave me enough time to apply.
I was thinking that maybe I could apply through Poland (and make the trek across to Latvia) as there is an embassy that you apply directly through here in Qatar.
However I am slightly aware of the Schegen Visa rules. I am only looking to go to Latvia for 5 days how can I make my flights work so that I can apply for a visa honestly.
Do I have to enter and exit through Poland even if my main destination is Latvia if I apply through Poland? Or does Poland have to be my main destination also?
Also if I do enter and exit through Poland to qualify for a visa. Can I then book flight tickets from Poland to Latvia and back again once I arrive in Poland or will my visa
