This isn't specific to HHV, but across the Hilton brands that are participating in the credit program, it works like this - during your stay you eat at on-site restaurant or get snacks from the grab-n-go, and charge to your room. At check out, they apply a credit to your folio of up to the credit amount for each day that you have eligible charges.
So, for example:
Monday: 4 x breakfast in the restaurant @$25 each - $100 charged to room. $36 credit applied at check out, net charge $64
Tuesday: 4 x bottle of water and bag of chips a the grab-n-go on the way out to go adventuring. $30 charged to room, $30 credit applied at check out. Net charge $0.00 (for this day)
Wednesday: Off site all day. no room charges, no credits for that day

Makes total sense and that’s how I expected it to work. For some reason I had a dim memory of a post that seemed to suggest that credit could be accumulated at HHV. I probably had too much cheese/drugs that day.
