Because it's a general principle that a passenger and their bag must travel together.
When this doesn't happen, it's due to reasons other than a passenger request that their bag is routed differently to themselves.

So why not go landside, retrieve your bag from the locker, and check it in for the AMS-JFK flight upon your return from AMS-CDG-AMS?
when you are travelling in an unusual manner like this, it is up to you to adapt.
In cases such as this, I always get to the origin of the "main" ticket the night before.
