In this case they replaced the cheese with a 'salad' being tabouleh. Keep in mind that this traditionally is not a typical western salad, but more like a bunch of fresh herbs. Its not Greek either and much more common in the middle east. Not sure why Aegean would serve that during the holiday season..
During the week leading up to Easter I like to order grilled octopus on fava puré which is one of my favorite Greek dishes. Though octopus with kofto pasta like what was served here, is of course another classic (and more home-style).
