First, can you check the bag through?

Second, having flown in and out of LAX over 500 times (maybe close to 1000), although RARELY a connection, I would say "Arrive domestic and leave security and get your bag is under one hour. (Sometimes LAX is painfully slow on luggage - I think that 40 minutes is what I should be able to say, but one hour is just about guaranteed). Walking to Fiji is 5 minutes. TBIT security for the past two years has generally taken me less than 15 minutes. So I would say that being at the counter just about 2 hours before the flight SHOULD be okay but I haven't flown on Fiji (only Air Tahiti) so you need to decide.
