If travelling in Economy - or you don't mind being downgraded into Economy - there is an argument for sticking to a tight timetable at LAX to minimise the more frustrating aspect of the trip and bring the total travel time down. May be your bags arrive the next day or two. If you are laidback / informed about the gamble then some you win, some you lose. The arrival into LAX could easily be early too.

If this really doesn't appeal, then though it can be tricky to get a fare from the usual websites, going on the next morning's service to HNL is sometimes no more expensive, so you can have a proper overnight rest in LAX and not worry about the connection. The next day fare wouldn't normally be more expensive but because websites live off MCT they often don't show longer connections. The 737 MAX isn't going anywhere and I think you'll have to get used to it. We can be sure that the well advertised problems are now ironed out, and I suspect the long term safety record will be at least as good as other aircraft. SEA is a much transfer location, 3 hours seems almost too much. HEL for 1 hour wouldn't worry me, but you do have to exit Schengen in HEL, which is easy if you have EU passports, and hopefully easy by the end of 2022 when ETIAS allows other nations to use the e-gates. No security check.
