I hope I don't regret blowing a ton of miles on my JFK-LAX to try them out. I do have a throne it appears and I don't care much about a door although it sounds a little fun. But skimpy food too? Were the drinks flowing? And no snack attack basket?
Granted different people have different expectations and preferences etc but I've never felt that I've had too little food to eat in Mint — and if you compare the pictures in the Mint food thread with what UA/AA are serving (especially UA) I think it's fairly clear that Mint catering is a step above any other domestic airline at the moment.

As for drinks I'm pretty sure you won't be short of them — unlike most other airlines you get a full beverage service on the ground (including cocktails) even before you take off, followed by a round of drinks before the meal service proper. And the flight attendants are very good at walking the cabin and offering refills during and after the meal service as well. Unfortunately there's no Mint-specific snack basket but most crews will walk the cabin with a tray of snacks from economy, and there's also the Pantry behind the Mint cabin for you to raid as well (which has sodas and snacks).

That said there are still things that AA/UA do better — the (non-throne) Mint seat is fairly substandard compared to Polaris and the AA widebody cabins (although probably comparable to business on the AA 321T), and JetBlue's IT and operation are abysmal as you can probably tell from the threads on this forum. But the soft product and service is still best-in-class IMO. So as long as your flight takes off on time (which is a big if) just sit back and enjoy the experience — and if you don't like it you can always go back to AA and leave the Mint cabin to the rest of us
