OK, I did ask today. It looks like they are "hiding" the premium bottles behind the regular bottles. The bartender showed me:
Glenlivet (Single Malt Whisky)
Glendfiddich (Single Malt Whisky)
Johnnie Walker Black Label (Blended Whisky)
Chivas Regal 18 (Blended Whisky)
Henessy (Cognac)
Patron (Tequila)
Plus, there are some other bottled import beers available as well (I saw Heineken, or was it Carlsberg? not that I think either would be worth importing...)
And our saga regarding "Club level access" continued yesterday. After we had lunch at Chinola (Club level only) we were stopped by a manager on exit and asked for our room number and were told we did not have "Club level" and were not allowed to use "Club level services". I told her who I talked to the first two days and that their manager approved it and "it should be in the system". She told me it wasn't and I should (no, literally: "must") go see the concierge to talk about this. I told her I was not gonna spend any more of my precious vacation time debating this issue...
I'm not ruling out that it's me completely misunderstanding the concept (I haven't had Hyatt status in years, I'm finally able to burn some very old points and this is my first stay in a Hyatt All-Inclusive resort), but this is starting to get ridiculous.
We will be leaving tomorrow, let's see how check-out in the Club Lounge goes.

1) I guess not, but I never inquired. I'm here with a 10-year-old, so it didn't matter for me anyways. There is no club / disco or anything like that, but I guess you could hang out at the Sports Bar until 2AM.
2) No. No service and there are signs saying that you should not be sitting / consuming there either (in accordance with a government measure)
3) They say you should, but I haven't seen a single guest wear a mask anywhere indoors or outdoors. All employees strictly wear masks at all times, indoors and outdoors.
