Thanks for all the good advice above. After researching these properties I am able to make some refinements that help to narrow the choices:

Anything Vegan is out. Yes I would like to detox sugar but most of the vegan food menus do not meet my dietary requirements and I'm not spending $2k/night all-inclusive unless I like the food! Alas this rules out Ashram which otherwise looks quite intriguing.
Arizona is out as too hot for June/July - if I am at a resort I want to spend time outdoors without heat stroke. So this may rule out Miravel which otherwise looks like it would fit the bill.
Leaning to something along the lines of Carmel Valley Ranch or Casa Palmero (Pebble Beach). Canyon Ranch also looks interesting
Considering Baja California and maybe Costa Rica but both are pretty hot & humid
