I know Turkish ask for a 2 month statement but mine has nothing on it as I recently received a status match from them. I do however have a return flight booked with ITA so not sure if that would be worth sending to Turkish.

If you have flown with ITA Airways after you have matched, proving that you have activity would be sufficient.
Also TK has a requirement that your status that you are trying to match needs to be valid for at least 8 more months. If I'm not wrong ITA status expires on January 31, 2023 thus if you are planning to match your ITA status with TK Elite, you have time until 31 May 2022 to apply for a status match unless you manage to extend your ITA status.
