Nope. Good Friday is not a bank holiday in France*, everything will be open with completely normal times then and Saturday. Sunday and Monday are Bank Holiday but many shops in Nice will be open, and if all else fails, they can make up for the stinky clothes with great Easter chocolate instead (I recommend Lac, Auer, and Neron - all in the old town though Lac has several shops).

* Except in Alsace and Moselle which get a number of Christian bank holidays the rest of the country doesn't. That was your fun fact of the day
