Cupcakes are a great idea - no need for knives, and possible not even forks or plates. Pick them up from your favorite local the day before your flight and FREEZE them. Cakes (and cupcakes) freeze very well and that will make it a LOT easier to get thru the airport, especially if you take them from the freezer just before you depart.
