This is interesting - I think Marriott does the averaging correctly - though I have never tried it enough to make a close call. With Marriott, if you book a multi-night stay and the rate is different, there is a callout that says something along the lines of "Rate Varies Throughout Stay". If you click that, you can see the individual nightly rates - the overall rate listed is an average of those.
Come to think of it, I have never seen a similar feature with Hyatt.
I have seen Hyatts averaging the rate on the availability page, then after booking you can check the breakdown and see the individual nightly rates. E.g. Zilara CC did this.
