To close the loop, Customer Care offered a choice of either a 500 USD travel e-cert or 25K miles. Satisfactory IMHO as I wasn't specifically inconvenienced too badly (other than losing 6 hours.)

Looking back, I guess all-in-all I had four opportunities to eat the morning of the 7th: breakfast served on board the aircraft just prior to the diversion being announced, then again if I had taken one of the F&B vouchers being offered at SNN, the "elevenses" in the lounge..which I did indulge in, and then the full English breakfast (or brunch as the case may be) on the SNN-ZRH flight.
