I've been looking too around this year's holiday season and have had no luck. The Hyatt Centric is a great alternative if point stays don't become available although it's around 15 minutes to Deer Valley and it's not as nice as the Stein Eriksen Residences but it would do the trick, as of now they do have availability. The only downside is that there are no cancelations, once your points are committed they are non-refundable.

If you plan on skiing Alta Snowbird on the other side of the canyon we like staying at the Cliff Lodge which is ski on ski off at Snowbird. The hotel looks uninviting from the outside (it was built to withstand avalanches) but it's very nice on the inside, they just put 35 million in renovations into the property and if you have an IKON or Mountain Collective pass you can get 25% off on your stay.
