I believe that should work. Each eVoucher is added in its own mini window and deducts from the total. I suspect it is more likely to work if there is at least some cash required to finish off the booking, but that's just a hunch. At least in theory, the final eVoucher could be used to hold the balance if the two eVouchers are more than the total cost of the new booking.
